Baby Bok Choy with Shiitake Mushrooms
Summary: This is a light and healthy Asian classic. The crunchiness of the baby bok choy counters the salty soft texture of the shiitake mushrooms. Very simple to make.
Ingredients & Cost:
- Baby Bok Choy [3 heads]… ~$1
- Mushrooms [a handful]… ~$0.50
- Vegetable or Olive Oil [2 tablespoons]… ~$.10
- Soy Sauce [2 teaspoons]… ~$.10
- Salt [to taste]
- Garlic Powder/Minced Garlic [optional]
Baby bok choy you can find in most Asian markets, and also many regular supermarkets these days. Don’t be afraid to wander into Asian markets! They may smell a bit funky, but the produce is usually top notch (and cheaper!). You can also find shiitake mushrooms there, either fresh or dried. Dried is usually what I get, it’s still great and much cheaper. However I found mine at Costco. Yeah, Costco! You can get a huge 16oz bag for about $12. There has to be at least 20 handful servings in there.
Directions:
1. Rinse the baby bok choy, taking off each of the stems and running them under cold water.
2. Chop the larger stems so that the are all about 2-3 inches long or less.
3. Re-hydrate the mushrooms by soaking them in a bowl of warm water, and heating it in a microwave for 2 minutes
4. Remove mushrooms from microwave and drain liquid. Squeeze the mushrooms a bit to get a out a bit more water.
5. Add in the soy sauce to the mushrooms and toss. I put in some garlic salt or powder (real garlic is good too).
6. In a stir-fry pan or anything that can hold all the bok choy, heat up the oil on medium-high.
7. When the oil is hot (you can see a shimmer), add the bok choy.
8. After 1 minute, add in the mushrooms.
9. When the bok choy gets to the level of softness you like (I like mine a bit crunchy), add salt to taste and serve.

Cost:
The total cost of this dish, which can serve as a side dish for at least 4 people (judge for yourself by the pictures) about $1.60. You can judge the portions for yourself.
Final comments:
If you don’t have the shiitake mushrooms, just put in more real minced garlic, and some soy sauce. It still tasts great! The mushrooms do give it a fuller, heartier taste and more texture. Hopefully this was a do-able recipe for most people. If not, please leave me a comment below. Thanks!

I’ve never cooked with bok choy (baby or otherwise) but now I really want to try it! This looks really good. And I actually walked by some bok choy in the Hawthorne Fred Meyer the oether day!

Haha, actually I get mine from the small Vietnamese grocery store on Belmont & ~37th. It’s pretty cheap there, I also get all my garlic, limes, and lemons there. I forget exactly, but near half price compared to Fred Meyer!
