Korean-style Grilled Short Ribs Recipe

Wary of certain Asian foods? Well don’t be, especially of Korean-style BBQ. It’s some really tasty stuff. And it’s not hard to make yourself! You really need only the first four ingredients below, and some help from your trusty George Foreman grill…

Ingredients:

  • 1 package of short ribs (about 1.5 lbs? see picture)
  • 1/2 cup soy sauce
  • 4 cloves garlic
  • 3 tablespoons sugar
  • 1 teaspoon sesame oil (optional, but recommended)
  • 1 stem green onions (optional)
  • bit of chopped ginger (optional)


Directions: (click on images to enlarge)

1. Chop the garlic and onions and ginger roughly. No need to be pretty, it’s for the marinade only. (I tried to use the micro-plane on some really old ginger, but gave up.)
2. Combine the soy sauce, garlic, sugar, ginger, and sesame oil all in one bowl and mix.
3. Using a large Ziploc bag, put the beef short ribs and the marinade inside and seal.
4. Place in the refrigerator for at least 30 minutes, preferrably an hour or so. No need to go overnight.
(4a. I would also make some rice to go with the meat right about now.)
5. Take the meat out of the bag, and remove all solid bits, ’cause they’ll burn.
6. Plug in your George Forman grill, and slap it on! Cook about 5-10 minutes until done. (Of course this can be done on a grill pan or outside grill as well.)

Flashy Presentation Tip: Pack some rice tightly in a wet bowl, and then turn upside down onto a plate. Wala! It’s artsy. Sprinke on some dried seaweed (furikake) and/or sesame seeds for a garnish.

Cost:
I don’t exactly recall, but the beef was less than $5 for sure. I always have some garlic laying around, and an entire bottle of sesame oil is a couple bucks and lasts forever. The green onions were a buck, and the ginger was really old and shrivelly so I just popped it in there. Meat is always kind of expensive, but wait for a sale and it’s not so bad.

Final comments:
See? It was really easy, right? Mix 4 ingredients and put in bag with meat. Wait an hour. Slap on grill. Make rice. Eat! Who need vegetables? Just kidding - I usually like some Korean pickled cabbage (Kimchi) with this, but I didn’t have any. Ah well, next time.

    I still remember the first time I made bulgogi, and how deceptively simple it was. The flavor is just sugar and soy sauce–though it’s usually overpriced at many restaurants.
