Ultimate Easy Eats - Summer Fruits

I’ve decided that the most overlooked Easy Eat, especially for us busy students, is fruit. I mean, most of it is pre-packaged by nature, you just throw in a bag and eat it. But I rarely see people either eating fruit on campus or when I visit people’s pads I never see any fruit. I think it’s the spoilage factor. I remember I used to buy some fruit, thinking “I’ll be healthy!”, and then 2 months later I’m dumping it out with green fuzz on it. Hmm… does fruit freeze well? I’m guessing not.

Anyways, I had a canteloupe today and it was awesome. I just cut it in half, scopped out the the seeds, and grabbed a spoon. I was supposed to take more pictures, but I ate it too fast!

The summer is almost over, but next summer I must endeavor to eat more summer fruits - watermelons, honey dew, canteloupes, cherries, blueberries, whatever. On that note, tomorrow we are going to Sauvie Island to pick some peaches. Sauvie Island is only about a 15 minute drive from Portland, and has a great variety of U-Pick fruit orchards. There are also some great markets if you just want to buy the fresh-picked fruit. Hopefully tomorrow I’ll put up a Peach Cobbler recipe!
