10-minute Pesto Biscuits
My new discovery of the week is biscuit mix. Biscuit mix + Shredded Cheese = Cheesy Biscuits! Biscuits + Herbs = Herb Biscuits. Now that’s the kind of math I like. I had some left-over pesto… so I defrosted some of my stew and made some pesto biscuits!
Ingredients:
- 2 ¼ cup Biscuit Mix
- 2/3 milk (any kind)
- Pesto (easy recipe here)
Directions: (click on images to enlarge)
1. Preheat oven to 450 F.
2. Stir biscuit mix, milk, and pesto together until it barely comes together and forms a dough.
3. Remove to a cutting board dusted with flour or biscuit mix.
4. Knead 10 times only. Try not to overwork it.
5. Spoon onto an ungreased baking sheet and bake for 8-10 minutes (Keep an eye on it towards the end).
6. Makes about 8-10 biscuits.
Serving Suggestion: Went great with my thawed Fridge-clearing stew.

Cost:
The pesto was a leftover, and the biscuit mix cost $2.59 for a huge box, worth probably 50-75 biscuits. Very economical.
Final comments:
My new friend, Biscuit and Baking Mix. I can’t believe it took me so long to find it. I think I like the cheesy biscuits better than these pesto ones, though. I love that I can make them in 10 minutes.

i love your recipe with all the pictures set up too! it’s great.
pesto is one of my favorite food accompaniments, and biscuits is one of my favorite foods so what an awesome sounding recipe!

what a cooincidence - i made cheesey herb biscuits tonight. i always make mine from scratch because biscuits are so easy. and the kids help me pour in all the ingredients so it’s a lot of fun. i’ve never made pesto bscuits tho and can’t wait to try that next.

Mmm…those look good too! Really tasty with tomato soup, I’ll bet. I think I need to try that combo out!
