We have way too many tomatoes, they’re popping out our ears. Good thing I can’t get enough of this bruschetta. Great as appetizer, part of a meal, or as breakfast for me personally.
Ingredients:
- 1 loaf of crusty bread
- Tomatoes
- Fresh basil bunch
- Olive Oil (best you have)
- 1 clove of raw garlic
- Salt (Kosher preferred)

You know it’s Labor Day Weekend when… you have to open a huge tub of Ortage nacho cheese that’s shelf-stable for 200 years. It felt a little bit weird having a get-together in light of current events, but it was good to see the people and talk. Slightly charred food (not my fault), nachos, beer, and potato salad. All in all, good food, good weather, good people, and very little complaining.

My new discovery of the week is biscuit mix. Biscuit mix + Shredded Cheese = Cheesy Biscuits! Biscuits + Herbs = Herb Biscuits. Now that’s the kind of math I like. I had some left-over pesto… so I defrosted some of my stew and made some pesto biscuits!
Ingredients:

The 55th Carnival of the Recipes is in town! There are some really great recipes on there, so good I had to stop reading them until I got some lunch. Don’t miss it.

This is barely a recipe - it’s what I do when I’m tired and I want something substantial, like last night. I go to the grocery store and find whatever steak-like meat is on sale for $3/lb and slap it on the grill (Lean Mean in my case) with kosher salt, pepper and a little butter. This way it’s cheap and I can have it just how I like it, pink in the center but still hot.

What to do with too much fresh picked fruit? How about an easy crisp! Great for fruit that have a gone a little too ripe for brown-bagging. I don’t bake very well, so this is all from my girlfriend. As long as you have the ingredients, it’s basically mix and and pour
.
Ingredients:
- 2-3 large fresh peaches cut into slices
- 1 cup blueberries
- ½ cup all purpose flour
- 1 cup quick oats
- ¼ teaspoon baking powder
- 6 tablespoons unsalted butter, softened
- ¼ cup packed light brown sugar
- ¼ cup granulated sugar
- 1 teaspoon cinnamon (optional)
- ½ teaspoon nutmeg (optional)

We picked some great peaches and blueberries at Sauvie Island, very ripe and very delicious. I think I ate a pound of the stuff as we picked, there was fruit everywhere. My girlfriend got very adventurous and made us some peach and blueberry cobbler, which was mighty tasty. I’m tired so I’ll put up the recipe tomorrow. But I’ll whet your tastebuds (or eyes?) with some pictures of our fresh fruit: (click to enlarge)

I’ve decided that the most overlooked Easy Eat, especially for us busy students, is fruit. I mean, most of it is pre-packaged by nature, you just throw in a bag and eat it. But I rarely see people either eating fruit on campus or when I visit people’s pads I never see any fruit. I think it’s the spoilage factor. I remember I used to buy some fruit, thinking “I’ll be healthy!”, and then 2 months later I’m dumping it out with green fuzz on it. Hmm… does fruit freeze well? I’m guessing not.
Anyways, I had a canteloupe today and it was awesome. I just cut it in half, scopped out the the seeds, and grabbed a spoon. I was supposed to take more pictures, but I ate it too fast!
The summer is almost over, but next summer I must endeavor to eat more summer fruits - watermelons, honey dew, canteloupes, cherries, blueberries, whatever. On that note, tomorrow we are going to Sauvie Island to pick some peaches. Sauvie Island is only about a 15 minute drive from Portland, and has a great variety of U-Pick fruit orchards. There are also some great markets if you just want to buy the fresh-picked fruit. Hopefully tomorrow I’ll put up a Peach Cobbler recipe!

I always thought pesto was some special magical sauce. But really, you just stick 5 things in a blender or food processor and you’re done. The main hurdle was the price of the cheese and the pine nuts. If you try to find pine nuts in your local grocery store, you’ll find them horribly expensive. Like a little airplane-peanut-bag size thing for $3. Costco to the rescue! There, you can get a huge 24 oz bag that has lasted us for 4 months so far for only about $7. If you don’t have Costco try Sam’s or BJ’s.
Ingredients:
- Large handful of pine nuts
- 2-3 cloves garlic
- 1 bunch of basil
- 1/2 cup olive oil
- Large handful of grated parmesan cheese
- 1 lb box of your choice of pasta - rotini & penne work well.
